Our spirits are crafted without using any preservatives, additives, clarifiers, flavours or other ‘chemical’ nasties.
No animal (terrestrial or marine) products are used in the production of our spirits, including all milk, marine or terrestrial animal products or derivitives.

Made on re-toasted and re-charred ex-Quokka Rebel’s wood, American White Oak, European (French) White Oak, and European Red Oak are brought together once more. Only now is the wood prepared to offer a less brash and increasingly complex flavour profile to the Quokka Highland Ballad.
The Highland Ballad‘s flavour profile will be familiar to premium highland scotch drinkers with a comforting, refined, understated, but ultimately all encompassing palate. The research and development has been extensive and is already over-delivering.
Made on all-new toasted and charred American White Oak, European (French) White Oak, and European Red Oak, the woods are brought together to contribute their unique characteristics to this all-Australian spirit.

With precise distillation parameters and attention to all details, we produce a perfectly smooth, clean and crisp glass of enjoyment straight from the still.
We do not filter or ‘tone’ our spirits, and consider such practices as concealing undesirable elements and flavours that should not have been produced in the first place.
